Pan de Elote (Mexican Style Corn Bread)



This is not your typical corn bread its much sweeter and has more moist to it. This is one of my favorite breads because its delicious and easy to make. In this picture I substituted flour for regular oatmeal oats.
Ingredients: 
  • 3 cups of corn kernels. It can be fresh of from the can. I like to save some time and use the can.
  • 1 14 oz can sweetened condensed milk
  • 3 eggs
  • 2 tablespoons baking powder
  • 6 tablespoons unsalted butter room temp preferably 
  • 1/2 teaspoon salt 
  • 6 tablespoons all purpose flour if you like you can also substitute to regular oatmeal. That is what I did in this picture. 
  •  1 teaspoon vanilla extract
Preheat the oven to 350F. In a blender add eggs, corn kernels, milk, butter, and vanilla extract and puree until smooth. Then add remainder of the ingredients and pulse a couple more times until its all mixed in together. Grease your baking pan and add the mixture in it. Bake in the oven for 40 or until golden brown. Rule of thumb if you stick a fork and it comes out clean its ready to eat!
